We love contributions to Channel Magazine from our 'locals'. One such local is Jacqui Wright, the friendly host at Sumo Salad in Takapuna. Jacqui (and husband Stuart) have put their hands up to provide a monthly contribution – to inform our readers of how to make tasty and healthy salads, and other bits and pieces. This month Jacqui's contribution is a great recipe for scrumptious Chicken and Walnut Roll.

We have an extensive range of rolls, toasties and wraps made fresh in our cafe every morning. One such roll we make is the Chicken and Walnut, a new addition to our many yummy flavours that we have available. Both kids and adults alike love this roll and it's good for lunches or dinner. I have slipped a whole roll into James's (our 16 year old son) school lunch - there were no complaints - so it was obviously good. I take them home and serve them up with one our great salads. This one is pictured with our South West Chicken Salad and Balsamic beetroot. Here at Sumo we have our wholemeal rolls especially made for us by our fantastic bakers but you can use any roll of your choice. Enjoy!!

Chicken & Walnut Roll

Ingredients - Makes 2 rolls. Approximately 32cm long
100gm of Cooked chicken shredded
40gm of finely chopped celery
40gm of crushed Walnuts
40gm of mayo or similar dressing
A handful of rocket
4 Slices of Tomato
extra dressing

Method: Mix the Chicken, Celery, Walnuts and mayo in a bowl. Cut your rolls lengthways and dress the bottom of the roll. Put some rocquette in the roll and add the slices of tomato. Place the chicken and walnut mix into the roll.
