Salad of the month

We love contributions to Channel Magazine from our 'locals'. One such local is Jacqui Wright, the friendly host at Sumo Salad in Takapuna. Jacqui (and husband Stuart) have put their hands up to provide a monthly contribution – to inform our readers of how to make tasty and healthy salads, and other bits and pieces. This month their contribution is a great recipe for Tuna and Dill Pasta.

Thought I would give Stu a break this month and do one of my favourite pasta dishes. Tuna Pasta and Dill is an old Sumo dish but I just love it. We buy a really good Red pesto dressing for the Café but its just as easy to make it. Kids big and small just devour it. Its great as accompaniment or a lunch time snack, or for the kids lunch box.

Tuna & Dill Pasta

Pesto Dressing
Place 1/3 cup of Sundried tomatoes, 1 clove of garlic and 6 large basil leaves in a saucepan. Just cover with water and bring to boil. Remove from heat as soon as it boils and let it stand for 20 minutes or so. Drain and place in a food processor. Add 1 large clove of garlic, 1 Cup packed fresh basil leaves, 1/4 cup of Olive oil and 1/3 cup of Parmesan Cheese. Salt and pepper to taste. Give it all a blat in the processor.

Other Ingredients
Cooked Spiral Pasta 250g
Pesto dressing above 1/3 cup (refrigerate the rest)
185g of Tuna Drained
2 Tbs of chopped fresh dill
50g of Fetta Cheese
Juice of 1 lemon

Place all above in a large bowl and mix thoroughly (or just pop into the cafe and with luck we may have it in the deli).
