Sumo Salad - Salad of the Month!

We love contributions to Channel Magazine from our ‘locals’. One such local is Stuart Wright, the friendly host at Sumo Salad in Takapuna. Stuart has put his hand up to provide a monthly contribution – to inform our readers of how to make tasty and healthy salads, and other bits and pieces.
“This month I have asked Anisha to come up with a salad,” explains Stuart. “I always hesitate when sampling Anisha’s cooking. Don’t get me wrong Anisha makes some wonderful food but as Anisha originates from India it tends to have alot of heat secretly hidden within, only to jump up and smack you right in the taste buds. A typical Vindaloo (a poms favourite meal after a night in the Pub) would only reach mild on the Richter Scale of Anisha’s cooking.
Anisha made this salad for us and it was delicious and the mix of veg and fruit was extremely refreshing. So give it a go its easy and makes for a great lunch.”

Apple & Cucumber Kachumber

2 Medium apples (sliced)
2 Medium Cucumbers (Cut into 2cm long pieces)
1 Orange (peeled,deseeded,segmented and cut in 2)
10 Button muashrooms sliced
1 medium carrot Julienned
2 medium tomatoes (Quartered)
2 Spring onions sliced.


Place the following ingredients into a small jar and shake.
2 Tbsp lemon juice
1 Tbsp Olive Oil
1 very small red Chilli (deseeded and chopped finely)
2 Tbsp Fresh Coriander
8 Mint leaves torn
Salt and pepper to taste.

Place all of the above in a large bowl. Pour over the dressing and toss. Serve on a bed of lettuce we used 8 Cos Leaves. Looks great tastes fantastic. Thanks Anisha.
