Feeling Saucy?

The Pasta Shop specialises in Fresh Pasta, Sauces, Salads and Ready Meals. We wanted to demonstrate how versatile our sauces are so in this month’s issue we are utilising two of our fantastic sauces to bring you a meal that is suitable for either the BBQ or to pan fry.

BBQ Lamb with
Watercress Pesto Salad

Serves four

1kg Lamb Rack
10 grams parsley chopped finely
20mls vegetable oil
1 sachet BBQ chipotle sauce
300gm fresh spirals
1 sachet watercress pesto
Salt and pepper to taste
2 tbls lemon zest

In two litres of boiling salted water (as salty as the sea) cook spirals for 3.5 minutes. Drain, place in a bowl stirring through vegetable oil so pasta does not stick. Chill in the fridge.
Preheat either BBQ or hot plate until smoking hot. While waiting for the grill to heat, place the Lamb Rack in a bowl , rub in 10 mls of vegetable oil over the rack and season to taste with salt and pepper.
Place the Lamb Rack on hot plate and sear both sides until golden brown. Take off the heat and wrap the Lamb Rack in tin foil. Place the wrapped Lamb Rack back on the Hot plate and cook for approx. 5 minutes. Remove from the Hot Plate and let it stand at room temperature for 10 minutes whilst still wrapped in tin foil.
While the Lamb Rack is standing, mix the fresh spiral pasta with the sachet of watercress pesto and place on a platter. 
Remove the Lamb Rack from the tin foil and brush the BBQ Chipotle Sauce over the meat. Place the chopped parsley on the chopping board and roll the Lamb Rack in it to cover.  Cut the Rack to desired portions and centre on the Watercress Pesto Salad. Garnish with lemon zest.

Our Semolina Flour
The Pasta Shop uses only 100% Semolina Flour in the production of our pasta coupled with Free Range Eggs. That’s why it’s so smooth and silky.
Semolina is a little wonder that for generations has been misunderstood.  Semolina has been documented back to Egyptians, some believe it originates from the Greeks B.C.
An analysis of the major nutrients found in semolina shows that it is high in protein, complex carbohydrates, potassium, magnesium and calcium. It is also a fibre with iron, zinc, manganese and copper. It is very low in saturated fat, cholesterol and sodium.v It is high in vitamin E and contains a fair amount of the B complex vitamins (especially folic acid).
The Pasta Shop uses Bellato Gold Semolina Flour imported from Australia. It is a Gold Winning Flour, which is rich in colour and gluten, perfect for
our pasta.
