In last month’s issue we wrote about our fabulous fundraising recipe book – ‘FEED – It’s game on in the kitchen’.
This month we’d like to share one of our wonderful recipes with you which was provided by a staff member from our naming rights’ sponsor, AMI. The cookbook is now at the printers, Benefitz, and we anticipate it will be on sale in early July. Proceeds from the fundraiser will go toward maintaining and upgrading the Netball North Harbour facilities, so our whole netball community will benefit.
This recipe is simply stunning, with vibrant colours backed by the intense flavours of feta, olives and sundried tomatoes.
200 g orzo pasta, dried
50 g sundried tomatoes, chopped into strips
50 g goats feta, chopped into squares
30 g pitted black olives, finely sliced
½ red onion, finely chopped
3 large spinach leaves, roughly chopped
1 tbsp olive oil
Salt and pepper to season
Boil a large pot of salted water. Pour the orzo into the boiling water and cook for approximately 15 minutes until al dente (just cooked), stirring every five minutes. In a large bowl place the spinach, onions, sundried tomatoes, olives and feta. Drain the orzo and refresh under cold water. Once cool, stir through olive oil, then add the other ingredients. Taste and season with salt and pepper if required.
